In 1976, Michel Bloch, a young French businessman came to America to make his mark. He decided to introduce the French Crepe, perhaps the very first fast food, to America. By 1982, after mastered the State and County Fair circuit he then established a crepe franchise with locations throughout California. He left the business to become a trilingual international marketing manager for a French corporation. He returned to the fast food arena in 1995 with mobile Crepe Carts followed by permanent locations at California State University, Sacramento and the University if California, Davis. The Crepe Institute was created to teach the art of making crepes and how to establish a crepe business at a desired location.
